Why This Recipe Works

  • Perfect meal prep recipe to make ahead, perfect for breakfast or to serve at the party.
  • You’ll need only five ingredients!
  • The recipe is customizable. Choose the gluten-free crust and add more veggies.
  • Fewer dishes to wash; it’s all baked in one dish.

Key Ingredients

  • Artichoke. I used artichoke quarters in brine. The marinated artichoke would work also.
  • Spinach. Use fresh spinach, wash and dry before adding to the dish.
  • Eggs. You will need 6 large eggs.
  • Cheese. I recommend using a hard texture cheese block, like Kerrygold Dubliner Irish cheese.
  • Pie Crust. I used Organic frozen pie shell, you can choose whole-wheat or gluten-free pie crust, or you can make your own spelt flour pie crust.

How To Make It

Step 1. Gather the ingredients—Preheat the oven to 375F degrees. Roughly chop artichoke and spinach. Layer the pie crust with artichoke and spinach.

Step 2. Whisk eggs, add shredded cheese, sea salt, mix to combine. Pour the egg and cheese mixture into the pie shell on top of the artichoke mixture. Gently stir inside the pie shell till the filling is mixed well with the eggs.

Step 3. Bake for 40 minutes till quiche is slightly brown and eggs are set and not jiggly. Fork should come out clean when testing. Cool before slicing.

Tips For Success

To make a gluten-free quiche, use gluten-free quiche crust.

If possible, use an artichoke can with BPA-free lining.

You might adjust the baking time if using a different size pan.

How To Reheat Quiche?

This quiche tastes better warm. To reheat, preheat the oven at 350F degrees. Place the same dish with quiche in the oven and heat for 15-20 minutes.
