Recipe Features

  • Almond flour blondies are a fast dessert to make! Plus, they can be made in one bowl-making for easy cleanup too.
  • This recipe is perfect for making ahead as part of the meal prep.
  • Besides adding a naturally nutty flavor to the blondies, almonds are a good source of healthy fats and protein.

Ingredient Notes

  • Almond butter. Almond butter is the main binder and adds most of the flavor to these blondies. I like to get the big jar from Costco or Trader Joe’s.
  • Almond flour. Almond flour is the gluten-free replacement for all-purpose flour in this recipe.
  • Coconut sugar. Coconut sugar functions as the sweetener in these almond flour blondies. It has caramel notes, lending a warm depth to the recipe.
  • Eggs. Eggs are holding the blondie batter together and making sure the texture comes out perfectly.
  • Chocolate bar. Feel free to use your favorite kind. I used dark chocolate in this recipe to add richness and tang to the blondies.

How to Make It (summary)

  • Gather the ingredients. Preheat the oven to 375F degrees.
  • Make the batter. In a large mixing bowl whisk eggs with sugar, add almond butter, mix well. Add almond flour, and coconut oil, combine well. Add chocolate pieces last.
  • Bake in the oven in the oven-save dish for 20-25 minutes, check with the fork if the batter is set.
  • Cool on the cooling rack. Slice and enjoy!

Recipe Tips

  • Make sure your almond butter and eggs are room temperature, so they combine with the other ingredients and are more evenly distributed throughout the blondie batter.
  • Use creamy almond butter kind for the smoothest texture.
  • Coconut oil is solid at room temperature, so make sure to melt and slightly cool before mixing it into your batter.
  • This oven dish is 8 3/4 x11. Keep in mind using a differently sized oven-safe dish may affect how long your blondies take to bake.

Variations

  • Experiment with different nut butter: cashew butter, peanut butter, they all have their own unique flavors.
  • Try adding vanilla extract to your blondies. Spices like cinnamon would also taste great.
  • Change up the fillings, chopped nuts, dried fruits, all add different spins to the same recipe.
