Delicious almond flour blondies made with almond butter, coconut sugar, and chunks of dark chocolate. This recipe is gluten-free,  made in one bowl without any flour.

  • Coconut sugar. Coconut sugar functions as the sweetener in these almond flour blondies. It has caramel notes, lending a warm depth to the recipe.
  • Eggs. Eggs are holding the blondie batter together and making sure the texture comes out perfectly.
  • Chocolate bar. Feel free to use your favorite kind. I used dark chocolate in this recipe to add richness and tang to the blondies.

  • Make sure your almond butter and eggs are room temperature, so they combine with the other ingredients and are more evenly distributed throughout the blondie batter.

Ingredients
  

  • 1 cup coconut sugar
  • 2 egg room temperature
  • 1 cup creamy almond butter room temperature (from Costco)
  • 1 dark chocolate bar chopped into small chunks
  • 1 3/4 cup almond flour
  • 1/3 cup coconut oil melted

Instructions
 

  • Gather the ingredients. Preheat the oven to 375F degrees.
  • Make the batter. In a large mixing bowl whisk eggs with sugar, add almond butter, mix well. Add almond flour, and coconut oil, combine well. Add chocolate pieces last.
  • Bake in the oven in the oven-save dish for 20-25 minutes, check with the fork if the batter is set.

  • Cool on the cooling rack. Slice and enjoy!
