Healthy Buckwheat Banana Pancakes (Gluten-Free)

Key Ingredients

Ingredient Notes

  • 2 large eggs
  • 2 ripe bananas
  • 3/4 cups of kefir (shake bottle before using)
  • 1/2 teaspoon of baking powder
  • 1 cup of buckwheat flour
  • 2 tablespoons of coconut oil

How to Make It

1. Gather the ingredients.

2. Whisk two eggs, add bananas, use a potato masher to mash bananas well. Add kefir, mix well. Add baking powder, stir and let it sit for a couple of minutes. Add flour, mix well.

3. Preheat a well-seasoned cast-iron pan on medium-high heat, add coconut oil. Using a large tablespoon add a pancake batter to the pan to form pancakes, once bubbles start appearing on the edges, turn over and cook the other side.

4. Optional. Serve with drizzled maple syrup, nuts, berries, yogurt.

Recipe Tips

Where to get the flour? Many stores have buckwheat flour available, I like this brand and order it online. This one is great too, the color of this flour is darker. Make sure to buy flour made with one ingredient instead of a pancake mix (the package looks too similar)

Tips for success. Do not overmix the pancake batter and make sure that the pan is well seasoned and preheated before placing a batter in the pan.
