  • 1 pound butternut squash cubed
  • 1 package uncured smoked bacon 8 oz.
  • 1 Gala apple cubed
  • 2 tablespoons apple cider vinegar
  • 4 tablespoons sprouted pumpkin seeds to garnish
  • 3 cups water
  • 1 1/2 teaspoon sea salt

How to Make It (overview)

Step 1. Gather the ingredients. Use kitchen shears to cut bacon crosswise in 1/8 pieces. Preheat dutch oven on medium-high heat, lightly brown bacon for a couple of minutes.

Step 2. In the mixer, place cubed butternut squash with water, pulse till blended.

Step 3. Add the squash mixture, diced apples, and sea salt to the pot with bacon. Cover, reduce heat to medium-low, and simmer for approximately 10-15 minutes.

Step 4. Before turning the burner off, add the vinegar, stir well. Garnish with pumpkin seeds before serving.

Recipe Tips

  • To keep this recipe sugar-free, use sugar-free uncured bacon.
  • To save time use frozen pre-cut organic butternut squash, which you can often find in the freezer section at the store.
  • Garnish with delicious sprouted pumpkin seeds.
