Easy Cabbage Rolls

These beef rolls with cabbage are juicy, tasty, and festive-looking. The fire-roasted tomatoes add the big flavor to this dish.

Ingredients

  • 1 pound ground beef
  • 1/2 medium size of cabbage head shredded, approx. 3 cups
  • 1 egg
  • 1 vidalia onion
  • 1 teaspoon sea salt
  • 1 can fire-roasted diced tomatoes
  • cilantro for garnish

Directions

  1. Gather the ingredients. ingredients to make Cabbage Rolls
  2. Slice cabbage thinly or shred in the food processor, place in a large mixing bowl.
  3. Boil water, add to the bowl to cover the cabbage, leave for 10 minutes soaking.
  4. Preheat oven at 375ºF.
  5. Shred or dice an onion,  add to the large mixing bowl. Add to the same bowl egg, salt, and drained cabbage.
  6. Using hands make eight small rolls. Arrange on a baking dish and bake for 45 minutes.
  7. Top cabbage rolls with diced tomatoes and put back in the oven for five more minutes. baking dish with Cabbage Rolls

Notes

Goes well with a tablespoon of grass-fed plain yogurt on top.
