These simple Cheesy Chicken Fritters are made with only 5 simple ingredients! There are gluten-free, made without flour, and baked in the oven instead. Serve with your favorite dippings sauce or make it a complete meal!

Corn. You can use fresh or frozen. I used frozen and let it sit in the colander for 10 minutes before using.
Fresh cilantro. This ingredient really brings flavor to this recipe, so don’t skip it.
Cheese. Freshly grated cheddar cheese would work the best here.
1. Gather the ingredients. Preheat the oven to broil settings. In the food processor, add chicken and pulse until the consistency of the ground meat. In a large bowl, add ground chicken, corn, cilantro, cheese, egg, salt, and mix well.
2. Use a wet tablespoon to scoop eight balls and place them on the baking sheet lined with parchment paper. Use a wet fork to flatten and form in the shape of patties. Broil on the second to top rack position, each side on high for 7 minutes.
3. Enjoy with your favorite dip or with a side dish.
Use a wet tablespoon when scooping the meat, this way meat won’t be as sticky and you will be able to form chicken patties.
When baking, place a baking pan on the second to top rack position so your fritters will get a crispy coating. Keep a close eye on the baking process to avoid the burn.
Variations. Use chicken breast meat instead of dark meat, substitute cilantro with fresh spring onions.
Storage tips. Store in the air-tight container in the fridge.
