Step 1. Preheat the oven. Rinse and pat dry the chicken. Make a “pocket” in each breast by cutting the thickest side but not completely through.
Step 2. Make a “filling”—cut cheese into small cubes. Cut broccoli into small pieces. Combine with cheese, add some salt.
Step 3. Line a sheet pan with parchment paper. Fill each breast with filling and secure with a wooden skewer similar to the “sewing” technique. Rub salt and paprika all over the chicken.
Step 4. Cook broccoli stuffed chicken until the temperature inside measures 165, about 20-25 minutes.
Cheddar Cheese. Choosing a soft variety of cheese help to create a gooey filling and enhance the flavor. Choose freshly grated cheese, it will melt perfectly.
Broccoli, use fresh or frozen. I used frozen and let them sit on the counter to defrost for 20 minutes. Make sure to chop them small.
You don’t really have to use wooden skewers, they sure do help to keep the “pockets” closed.
Smoked paprika truly adds to the color and flavor palette.
Chicken breasts. Choose a large size.
For chicken meat to stay moist, don’t overcook the chicken. The internal temperature should measure at 165.
