Easy Pumpkin Curry Pasta with Ground Beef

This simple and speedy pumpkin curry pasta recipe made in 25 minutes, a perfect option for a busy lifestyle. The autumn-like colors and flavors of creamy coconut milk with pumpkin puree and pasta make this meal comforting and satisfying.

Ingredients

  • 1 package of pasta
  • 1 pound of ground beef
  • 1 can of coconut milk
  • 1 can of pumpkin puree
  • 1 teaspoon of sea salt
  • 2 teaspoons of curry
  • 1/3 cup of basil Leaves

Directions

  2. Cook pasta according to the directions on the package. Using a deep pot bring water to boil. To speed up the process cover pot with the lid.
  3. While pasta is cooking, in a large skillet, on the medium-high heat brown ground beef till no longer pink, using a wooden spoon to break the large chunks of meat. Notes

Tips on the ingredients:

Coconut Milk. If possible, use unsweetened coconut milk with minimum additives. I like to use the Thrive market brand.

Pasta. Use your favorite kind. This recipe was made using this gluten-free pasta made with rice and amaranth.

Pumpkin puree. Choose pure pumpkin pure and not the pumpkin pie mix.
