Meatballs with Zucchini


These meatballs with zucchini are made in one pan in less than 40 minutes. This recipe is low-carb, fuss-free, perfect for meals prep. The meatballs turn out delicious and comforting.

Either way, these meatballs will be the answer! They are made without flour and baked in the oven under tomato sauce and could be served even to picky eaters.

How to Make It

1. Preheat oven at 375F degrees. Gather the ingredients. Wash and cut off the ends of the zucchini. Use a grater box to shred zucchini using the side with larger holes.

2. In a large mixing bowl mix ground beef, shredded zucchinis, egg, 1 teaspoon of salt, and garlic powder. Form nine large meatballs, arrange them in the baking dish.

3. Pour over one cup of tomato sauce, sprinkle with 1/4 teaspoon of salt. Bake for 30 minutes. The internal temperature should measure over 160F degrees when checked with a food thermometer.

4. Sprinkle with fresh basil before serving.

Recipe Tips

For best flavor and texture: add enough salt and don’t overmix the meat.

Serve over spaghetti or mashed potatoes. For low-card options serve over spaghetti squash or zucchini noodles.

Variations

  • Feel free to substitute ground beef with ground turkey.
  • Add any spices you like, Italian seasoning, dried basil, powdered onion or powdered garlic will work the best here
  • Used your favorite marinara sauce instead of passata sauce.
