No-Bake Chocolate Truffles

Easy chocolate truffles recipe is a healthy no-bake treat made with simple, wholesome tasty ingredients. These gluten-free chocolate truffles are perfect to make in advance to have available on hand for a quick sweet bite.

Ingredients

  • 1 cup packed of pitted organic dates
  • 1/4 cup plus 2 tablespoons, of nut butter (I used almond butter from Costco)
  • 3 tablespoons of cacao powder
  • 1 cup of coconut flour
  • 1/2 cup of water
  • pinch of salt
  • 1/3 cup of unsweetened coconut flakes

Directions

  2. Place dates in the food processor, pulse till all large pieces are broken and crumble-like. Add nut butter, cacao, flour, water and salt, pulse till well blended and the texture feels like playdough, shouldn’t be sticky. If too runny add flour, if too thick add more water.
  3. In a bowl place coconut flakes. Roll truffles to form the small balls between the palm of your hands, once the balls are formed, gently roll in the flakes slightly pressing. Store in the fridge. No-Bake Chocolate Truffles balls in the plate with coconut flakes
