Shortcut Pizza with Chicken and Spinach


Simple homemade pizza with chicken perfect for Friday night. Made with store-bought dough and leftover ingredients, like rotisserie chicken, some spinach, and cheese. Tasty ingredients make tasty pizza!

Ingredient Notes

  • 1 tablespoon of olive oil
  • 1 package of pizza dough (defrosted in the fridge overnight)
  • 1/2 cup of tomato sauce (passata)
  • 1/4 teaspoon of sea salt
  • 1 1/2 cup of the chicken meat (cubed)
  • 1 cup packed with spinach
  • 1 cup of Irish cheese shredded (or any hard cheese)

How to Make It

1. Preheat the oven to 450 degrees F. Prepare the ingredients.

2. Line a baking sheet with unbleached parchment paper. The dough will be sticky, sprinkle one tablespoon of olive oil on top, grease the paper and hands before starting to work with pizza dough. Using sharp knife to slice the dough in half, form two pizza crusts by gently stretching and pulling the dough while holding still it in your hands. Place on the baking sheet.

3. Mix tomato sauce with salt spread evenly over the crusts.

4. Add chicken on top of the tomato sauce. Use kitchen scissors to cut spinach on top, add shredded cheese. Bake for 25 minutes, till golden and the crust is slightly crispy.

Recipe Tips

I like using pizza dough made with limited clean ingredients, organic if possible. This is my favorite store-bought pizza dough, it’s made with simple real food ingredients. Usually could be found in the frozen section at the grocery store.
