This recipe is perfect for cooking in advance for lunches to go. The juicy meat, beans, and sweet onions mixture make these stuffed tortillas favorites.
Step 1. Gather the ingredients. Preheat the pan on medium-high heat and cook tortillas according to the directions on the package. Once cooked tortillas are cooked, use the same skillet. Add two teaspoons of ghee, so the pan is coated, add onions and fry till golden brown. Add beef and brown till thoroughly cooked.
Step 2. Prepare tortillas for filling. Evenly divide the beef and onion mixture and place in the middle of each tortilla, add some shredded cheese on top, make an envelope-style wrap.
Step 3. Fry stuffed tortillas using some ghee and putting wrapped ends down first. Fry each side till golden and slightly crispy.
If possible use tortillas made with real ingredients without any additives. I used the Siete gluten-free tortillas.
