Creamy cucumber tomato salad is one of my favorite summer salads. The freshness of the dill, juicy tomatoes, fresh in-season cucumbers, radishes, and crunchy sweet onion creates a light and flavorful dish.

Ingredient Notes

  • Tomato. Roma or heirloom tomatoes would work the best.
  • Onion. I like to choose Vidalia sweet onion for a milder flavor.
  • Cucumber.
  • Radishes.
  • Dill. Fresh dill adds so much flavor.
  • Yogurt. For the best flavor, choose full-fat yogurt.
  • Sea salt. Don’t forget to add salt.

How to Make It

1. Gather the ingredients. Wash all vegetables, chop, slice, add to the large mixing bowl.

2. Finely dice the dill, add to the bowl. Add yogurt and salt, mix, and serve.

Recipe Tips

Feel free to use olive oil instead of yogurt dressing.

If you are looking to add more protein, the sliced boiled eggs work great here.

To make this dairy-free, chose dairy-free yogurt.
