Vareniki  (Russian Pierogi)

These Vareniki or Russian pierogies are the ultimate comfort food!  They are filled with mashed potatoes and cheese and fried with sweet onions.

Key Ingredients:  Eggs, kefir, flour, olive oil, potatoes, shredded cheese, butter, onion, sour cream.

Make vareniki dough, combine ingredients, knead the dough till smooth and resembles soft playdough. Let it rest.

Make vareniki filling, cook potatoes, combine with shredded cheese, use potato masher to combine.

Roll out the dough. Cut out circles with a biscuit cutter. Place a teaspoon of potato filling in the center.

Fold the dough over the filling to form a half-moon. Pinch the edges together to seal from both sides.

Lay them on the flat surface with some flour while you finish making the rest of the dumplings.
