Equipment

  • cast iron skillet

Ingredients

  • 1 pound blue oyster mushrooms cleaned
  • 2 tbsp ghee
  • 1 tsp garlic powder or fresh minced garlic
  • 1/4 salt
  • 1/4 tsp black pepper
  • 1 tbsp toasted sesame oil

Instructions

  • Clean all the oyster mushrooms by quickly rinsing or gently wiping them with a damp paper towel. Do not let the mushrooms soak in the water, as they will absorb water and become mushy. If mushrooms are big slice them mushrooms into thin strips.
  • Heat some ghee in a pan over medium-high heat. Once the ghee has melted, place mushrooms in the hot oil and pan-fry for 3-5 minutes, stirring occasionally, until they are golden browned.
  • Reduce the heat, add powdered garlic, salt, and pepper, and continue pan-frying for an additional 2 minutes till they get a little crispy.
  • Remove crispy fried oyster mushrooms from the heat, add toasted sesame oil, and stir once before serving. Serve while still hot. Enjoy!

Notes

Before cooking gently wipe them gently with a damp cloth or paper towel to remove any dirt or debris.
Trim off the tough stem ends. You can do this with a knife or simply by breaking them off by hand.
If you have leftover fried mushrooms, they can be stored in an airtight container in the fridge for up to 3 days.
These mushrooms are best enjoyed while still warm, so consider reheating them in a skillet over medium heat until heated through.
You can also make fried oyster mushrooms using panko bread crumbs, this will provide a crunchy coating and crunchy texture.
Serve fried oyster mushrooms with rice, over pasta, with a simple salad of greens and vinaigrette. They would be delicious served alongside some roasted vegetables.
