These easy healthy breakfast tacos are absolutely delicious and made with a total of SEVEN ingredients. The recipe is very simple and tacos are ready to eat in 15 minutes.
Gather the ingredients. Preheat skillet on the medium-high, add a tablespoon of ghee to coat the bottom and fry tortilla on each side for about a minute, tortillas are cooked once bubbly and slightly brown. Form taco shape while still warm.
Once all tortillas are cooked, in the same pan, add diced tomato and let it simmer for a couple of minutes. In a mixing bowl whisk eggs, add salt, mix well. Add the egg mixture to the pan, cover with a lid for 2 minutes. While eggs are cooking, shred cheese and diced avocado. In two minutes take the lid off the pan and start scrambling eggs.
Start filling tortillas by placing warm egg filling first, adding cheese, then avocado. Salt to taste.

-If possible use tortillas with healthy minimum ingredients and made with healthy oil.-To make this recipe gluten-free use gluten-free or corn tortillas.-Add some hot sauce or sour cream if desired.
