Healthy Breakfast Tacos With Avocado

These easy healthy breakfast tacos are absolutely delicious and made with a total of SEVEN ingredients. The recipe is very simple and tacos are ready to eat in 15 minutes.

Ingredients
  

  • 2 tbsp ghee for frying
  • 4 tortillas large-sized
  • 1 Roma tomato diced
  • 8 egg large-sized
  • 1/8 tsp sea salt
  • 1 1/2 avocado peeled, pitted and diced
  • 1 cup cheddar cheese shredded

Instructions
 

  • Gather the ingredients. Preheat skillet on the medium-high, add a tablespoon of ghee to coat the bottom and fry tortilla on each side for about a minute, tortillas are cooked once bubbly and slightly brown. Form taco shape while still warm.
  • Once all tortillas are cooked, in the same pan, add diced tomato and let it simmer for a couple of minutes. In a mixing bowl whisk eggs, add salt, mix well. Add the egg mixture to the pan, cover with a lid for 2 minutes. While eggs are cooking, shred cheese and diced avocado. In two minutes take the lid off the pan and start scrambling eggs.
  • Start filling tortillas by placing warm egg filling first, adding cheese, then avocado. Salt to taste.

Notes

-If possible use tortillas with healthy minimum ingredients and made with healthy oil.
-To make this recipe gluten-free use gluten-free or corn tortillas.
-Add some hot sauce or sour cream if desired.
