Gather the ingredients—Preheat the oven to 425F degrees.
In the small saucepan, melt the ghee. Wash potatoes, remove imperfections, dice small, approx 1/4 inch. Add potatoes to the mixing bowl, add ghee, salt, and basil, mix well so that ghee coated all potatoes.
Arrange potatoes on the sheet pan lined with parchment paper.
Bake for 15 minutes till browned and soft, check potatoes with the fork. Remove from the oven, slightly move potatoes to make four "nests" for the eggs to hold the shape. Carefully crack each egg in the nest, place sausage on top of the potatoes. Season eggs with salt if desired. Bake for 3-5 minutes till egg whites are set, but yolks are still jiggly. Serve warm with ketchup or hot sauce.
Notes
Dice potatoes small so they can bake faster.For best flavor, use enough fat or oil to coat the potatoes, so they are not dry and enough spice.
