Baked Cod With Maple Mango Glaze (GF)

This easy baked cod recipe is made with sweet mango glaze. It makes a tasty and festive-looking dinner. The recipe is gluten-free and one of my favorites.

Ingredients
  

  • 2 pound wild-caught cod
  • 15 chunks frozen mango
  • 3 tsp maple syrup
  • 3 tsp olive oil
  • 1 cup frozen corn
  • 1 tsp salt

Instructions
 

  • Preheat oven to 375F degrees.
  • Pat dry fish before arranging it on the baking dish.
  • Use cast iron pan to quickly roast on high first mangoes, then corn.
  • Make the dressing by mixing maple syrup, olive oil, salt.
  • Arrange mango-corn mixture on top of the fish and pour over the dressing.
  • Bake for 15-17 minutes till cod is “flaky”.
