Ingredients

  • 6 tortillas I used Kamut Tortillas found locally
  • 1/2 cabbage large-sized
  • 4 eggs boiled
  • 2 tbsp ghee for the pan
  • 1 pinch salt

Instructions

  • Prepare cabbage by washing and shredding using a knife or food processor.
  • Preheat the pan, saute cabbage till soft. Add salt to taste. Dice eggs small and add to the cooled cabbage.
  • Prepare tortillas. Put two tablespoons of cabbage mixture in the middle of each tortilla, and make an envelope-style wrap. Using the same pan, add ghee and fry stuffed tortillas putting wrapped ends down first. Fry each side till golden and slightly crispy.

Notes

-Best when made with freshly cooked tortillas.
-Choose a bigger size of tortillas to keep the filling in.
-Use a white cabbage and cook it till completely soft.
-This recipe is also great with added sliced ham.
