This pasta with goat cheese made in just under 30 minutes using only seven ingredients. The perfect combination of creamy goat cheese, olive oil, and balsamic vinegar creates a satisfying, comforting meal.

Ingredients
  

  • 1 package pasta whole wheat or gluten-free kind
  • 1 pound frozen spinach 1 package
  • 1 can diced tomatoes fire-roasted kind
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 5 ozs goat cheese
  • 2 tsp sea salt

Instructions
 

  • GATHER THE INGREDIENTS.
  • BOIL PASTA. In a large pot, add water, cover, and bring to boil. Cook spaghetti according to the directions on the package. I like to add a teaspoon of salt to the water and break spaghetti in half. Once pasta is cooked, drain and leave it in the colander.
  • SAUTE VEGETABLES. Use the same pot on medium-high heat saute spinach and tomatoes covered with a lid for 2-3 minutes.
  • COMBINE. Add pasta to the pot with vegetables, add olive oil, balsamic vinegar, and one teaspoon of salt, mix well.
  • SERVE. Serve pasta on the plates or in a large serving dish, add crumbled cheese on top.

Notes

To make this meal gluten-free, choose gluten-free pasta.
For added animal protein, add rotisserie chicken or bake chicken breasts at 400 degrees in the oven for 15 minutes, let it rest before slicing and adding to the pasta.
If you are a garlic lover, add some fresh or powdered garlic to the creamy sauce for extra flavor.
Optional. Grate some Parmesan cheese on top.
