Gather the ingredients. Dice onions small. Set Instant pot to "saute" setting, add a tablespoon of ghee. Once the ghee is heated, add diced onions and cook till soft.
Add the ground beef to the onions. Cook till no longer pink, using a wooden spoon to stir and break large chunks of meat. Turn the "saute" button off.
Add diced tomatoes, water, tortellini, sprinkle with spices, gently stir.
Cover Instant Pot with lid, seal, and set the timer for 2 minutes on high pressure. It will take approximately 10 minutes for pressure to build.
Once the timer is up and you hear the beeping sound, do a manual pressure release. Open the pot, add spinach, and stir. Taste and adjust the salt.
Serve with your favorite toppings: grated cheese, a dollop of yogurt, or sour cream.
