Oat Flour Banana Bread

This oat flour banana bread is easy to make; it’s moist and perfect for any time of the day. Top with nut butter or enjoy as it is.

Ingredients
  

  • 1/2 cup salted butter melted
  • 3 egg room temperature
  • 4 large ripe banana divided
  • 1/2 cup kefir room temperature
  • 1 tsp baking powder
  • 3 cups oat flour
  • 3/4 cups chocolate chips

Instructions
 

  • Gather the ingredients—Preheat the oven to 375F degrees.
  • Melt the butter, let it cool slightly. In a large mixing bowl, whisk the eggs, add three bananas, mash using a potato masher.
  • In a measuring cup, add kefir and baking powder. Stir vigorously utill you see the bubbles on the surface. Add to the bowl with eggs.
  • Add cooled butter to the bowl with eggs, mix. Start adding flour gradually while stirring to combine. Gently fold chocolate chips.
  • Line a loaf pan with parchment paper. Add the batter. Slice the last banana in half and arrange on top, gently pressing.
  • Bake for 1 hour on a middle shelf till toothpick comes out clean when tested in the loaf center.

Notes

Use ripe or over-ripe bananas, much sweeter this way.
Bake completely; check with a toothpick. Insert in the center; if it comes out clean, it’s baked. The baking time will depend on the baking pan and the oven.
Cool before enjoying, so the bread will hold shape better when slicing.
