This low carb chicken and dumplings soup recipe is very simple and is made in one pot. This recipe is naturally gluten-free, it’s made in 15 minutes, and is a great time-saver on a busy weekday
Heat a large dutch oven on medium-high heat. Add a tablespoon of ghee. Once melted add the vegetables. Cook for approximately four minutes while stirring. Add chicken meat and broth.
Make dumplings. Whisk eggs, add a pinch of salt, add almond flour, make a dough.
Slice to make several dumplings. Add to the pot. Cook 2-3 minutes, turn the burner off.
Salt to taste.

-Use moist dark chicken meat or rotisserie chicken with the skin on.
-Use a quality bone broth.
-If desired add more flavor, use spices such as lemon juice, thyme, dried basil, rosemary.
