Easy oven roasted delicata squash recipe is a perfect basic recipe to make ahead as part of for meal prep. Once cooked the squash could be used in many dishes throughout the week, such as salads, pizza toppings, warm bowls, stir-fries. The flavor of this squash is sweet and nutty and the skin is edible.

  • 3 delicata squash medium
  • 2 tbsp olive oil


  • Preheat oven to 425F degrees. Gather the ingredients.
  • Wash, scrub, and dry the squash. The skin will be edible, so it’s important to remove the sticky labels completely if present. Cut the ends off, slice in circles.
  • Then slice each circle in a half-moon shape and remove the seeds with the knife or the spoon.
  • Prepare a baking sheet lined with parchment paper. Add squash, drizzle with olive oil, mix well, so all pieces are coated in oil.
  • Bake for 20 minutes on the top shelf till lightly brown and soft.
  • Enjoy in salads or as topping in other dishes.
