Almond Flour Blondies

Delicious and soft almond flour blondies made with almond butter, coconut sugar, and chunks of dark chocolate. This is a healthier gluten-free recipe made in one bowl without any flour.

Ingredients
  

  • 1 cup coconut sugar
  • 2 egg room temperature
  • 1 cup creamy almond butter room temperature (from Costco)
  • 1 dark chocolate bar chopped into small chunks
  • 1 3/4 cup almond flour
  • 1/3 cup coconut oil melted

Instructions
 

  • Gather the ingredients. Preheat the oven to 375F degrees.
  • Make the batter. In a large mixing bowl whisk eggs with sugar, add almond butter, mix well. Add almond flour, and coconut oil, combine well. Add chocolate pieces last.
  • Bake in the oven in the oven-save dish for 20-25 minutes, check with the fork if the batter is set.
  • Cool on the cooling rack. Slice and enjoy!

Notes

Make sure your almond butter and eggs are at room temperature.
Use creamy almond butter for the smoothest texture
Coconut oil is solid at room temperature, melt, and slightly cool before mixing it into your batter.
This baking dish size is 8 3/4 x11. Keep in mind using a differently sized oven-safe dish may affect how long your blondies take to bake.
The flavor of these blondies will change if you use different varieties of chocolate and nut butter.
