Whisk two eggs, add bananas, use a potato masher to mash bananas well. Add kefir, mix well. Add baking powder, stir and let it sit for a couple of minutes. Add flour, mix well.
Preheat a well-seasoned cast-iron pan on medium-high heat, add coconut oil. Using a large tablespoon add a pancake batter to the pan to form pancakes, once bubbles start appearing on the edges, turn over and cook the other side.
Optional. Serve with drizzled maple syrup, nuts, berries, yogurt.
Notes
-Do not overmix the pancake batter and make sure that the pan is well seasoned and preheated before placing a batter in the pan.
