Healthy Buckwheat Banana Pancakes (Gluten-Free)

Ingredients
  

  • 2 eggs large-sized
  • 2 bananas ripe
  • 3/4 cup kefir shake the bottle before using
  • 1/2 tsp baking powder
  • 1 cup buckwheat flour
  • 2 tbsp coconut oil

Instructions
 

  • Gather the ingredients.
  • Whisk two eggs, add bananas, use a potato masher to mash bananas well. Add kefir, mix well. Add baking powder, stir and let it sit for a couple of minutes. Add flour, mix well.
  • Preheat a well-seasoned cast-iron pan on medium-high heat, add coconut oil. Using a large tablespoon add a pancake batter to the pan to form pancakes, once bubbles start appearing on the edges, turn over and cook the other side.
  • Optional. Serve with drizzled maple syrup, nuts, berries, yogurt.

Notes

-Do not overmix the pancake batter and make sure that the pan is well seasoned and preheated before placing a batter in the pan.
