Easy Sweet Potato Shepherd’s Pie

This simplified sweet potato Shepherd’s pie recipe is made in just under 30 minutes. This recipe is gluten-free and made with the help of seven healthy ingredients that could be found at almost any grocery store. The sweet potatoes, ground beef, lentils, and sweet caramelized onions together create a perfectly comforting and filling family dish.

Ingredients
  

  • 6 sweet potatoes small-sized or 3 large
  • 4 tbsp butter
  • 1/2 Vidalia onion large-sized, diced
  • 1 pound ground beef
  • 1 can tomato sauce 15oz
  • 1 can black lentils 15oz
  • 2 1/2 tsp sea salt

Instructions
 

  • Gather the ingredients.
  • COOK POTATOES. Wash and scrub sweet potatoes, remove imperfections, dice into an inch- sized cubes. Place in the large pot, add enough water to cover potatoes, bring to boil on high heat. Cook for about 15 minutes till soft (poke with the fork to check).
  • MAKE MEAT SAUCE. While potatoes are cooking, preheat a large skillet on medium-high heat, add a tablespoon of butter, add diced onions and cook till soft and golden. Add ground beef, stir a couple of times breaking meat into small pieces. Once the meat is cooked and no longer pink, add tomato sauce, rinsed lentils, a teaspoon of salt. Mix well and cook for a couple of minutes.
  • Once potatoes are cooked, cover with the lid, pour out the water, add butter and 1 1/2 teaspoon of salt, mash well with the potato masher.
  • COMBINE. Place meat sauce at the bottom of the oven-safe baking dish. Place mashed potatoes on top of the sauce and use a spoon to evenly spread it out.

Notes

-There are two things that help to make this recipe speedy. You can skip and not peel potatoes, save time just by scrubbing potatoes well. Dice potatoes into smaller chunks so they cook faster, make sure not to overcook.
