15 Minute Butternut Squash Gnocchi Skillet

Quick and easy dinner made with only six ingredients, perfect even for picky eaters. This butternut squash gnocchi recipe is a great option for a busy evening when you don’t really feel like cooking. And the best part is, it’s made in one pan!

Ingredients
  

  • 24 oz gnocchi two 12oz. packages of Trader Joe's kind with cauliflower, or your favorite kind
  • 12 oz italian sausage 1 package
  • 3 tbsp butter
  • 1 can butternut squash
  • 1/2 tsp sea salt
  • 3 cups mixed greens packed

Instructions
 

  • Gather the ingredients.
  • Pan saute gnocchi according to the directions on the package. Preheat large cast-iron skillet on high, add two packages of gnocchi, 1/2 cup of water, cover with the lid to steam. Cook till the water has evaporated for about 4-5 minutes.
  • Slice the sausage and open the can with butternut squash.
  • Once the gnocchi has cooked and soft, add butter and sausage and fry till slightly brown for about 2 minutes.
  • Add butternut squash puree, salt, stir well. Add greens, stir and serve.

Notes

-Gnocchi. I used Trader Joe’s cauliflower gnocchi made with simple ingredients: cauliflower, cassava flour, potato starch, extra virgin olive oil, and sea salt. Make sure these are frozen before cooking, do not defrost.
-Greens. This recipe used a blend of greens made with spinach, chard, and kale.
