These oven-baked rainbow chicken skewers made with flavorful marinade are a healthy and quick dinner option with minimum ingredients and minimal steps involved. These skewers are juicy, filling, and satisfying.
Prep. Gather the ingredients. Preheat the oven to 425F degrees. Prepare a small-sized sheet pan.
Make marinade. Juice the lime. In a large dish add coconut aminos, lime juice, chili powder, minced garlic. Stir well to combine.
Slice and dice. Wash and pat dry the chicken breasts, slice into half an inch cubes, add to the dish with marinade and stir to coat it well in the marinade. Peel and slice onions, dice large. Clean bell peppers, remove seeds, slice into 1-inch thick chunks.
Making kabobs. Start threading kebabs on the skewers. Alernate between meat, onion, and different bell peper colors to create colorful skewers. Arrange above the rim of the baking sheet pan.
Bake. Bake in the preheated oven on a middle rack for 15 minutes. Then turn over and broil on high for 10 more minutes moving it to the top rack. To make sure chicken is still soft and moist, it's important not to overcook. Use a meat thermometer, the chicken internal temperature should measure at 160 degrees.

For best flavor, if time allows leave chicken to marinate for a minimum of 1 hour or overnight.To keep it low-carb and keto serve as is. Otherwise, you can serve it with a side of rice. If serving to kids reduce the chili powder amount.If using wooden skewers, pre-soak for 10 minutes to avoid getting them burned in the oven.For more protein, you can add more chicken and reduce the number of bell peppers.I used chicken breasts, for juicier chicken bites feel free to use chicken thigh meat.To make sure the chicken is still moist and tender, don't over-bake.
