4-Ingredient Cookies With Jam

This is an easy recipe on how to make envelope-style cookies with jam.  These cookies are made with spelt flour and are a healthier alternative to store-bought cookies. These are tasty, simple, and fun to make and require only four ingredients.

Ingredients
  

  • 9 tbsp salted butter softened
  • 1 cup yogurt
  • 2 1/2 cup sprouted spelt flour
  • 12 tsp strawberry jam thick kind, not runny

Instructions
 

  • Gather the ingredients. Preheat oven to 375F degrees.
  • MAKING DOUGH. In a large mixing bowl add soften butter and yogurt, mix well till combined. Slowly and gradually start adding 2 cups of flour, mixing well with a spoon. Start mixing with hands slowly adding the rest of the flour till dough is not sticky and playdough-like. Shape into the large ball and slice the dough ball in half, put one half in the fridge wrapped in the plastic while working with the other half.
  • MAKING COOKIES. Line two baking sheets with parchment paper.  Roll the dough making a rectangular shape, approximately 1/4 inch thickness. Use a pizza cutter to make fourteen 2 1/2x 2 1/2 inch squares. Carefully place a half teaspoon of jam in the middle of each square.
  • Wrap opposite ends of the cookie to make an envelope shape. Arranging on the baking sheet apart so cookies don’t’ touch. Repeat with cooled half of the dough and fill the second baking sheet with cookies. Bake on the middle rack for 20 to 25 minutes till slightly golden.

Notes

The dough in this recipe is not sweetened since the jam is sweet it has the perfect balance of salted butter in the dough and sweet jam. If you would like feel free to add sweetener to the dough.
If the butter is not soft enough, use the grater box or Microplane to grate the butter before mixing it with yogurt.
This recipe makes 24 large cookies, if cookies are shaped smaller then there will be more cookies and a reduction in the baking time.
