Primavera Stuffed Chicken

This Primavera stuffed chicken recipe is quick and easy. It looks festive and tastes delicious. Fresh basil, tomato, melted mozzarella add so much flavor to this low-carb and one-dish gluten-free meal.

Ingredients
  

  • 2 chicken breasts
  • 3/4 mozzarella log sliced (4 oz)
  • 2 tomato large-sized, not ripe
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 15 basil Leaves washed
  • 1 tsp dried oregano
  • 1/4 tsp sea salt
  • black pepper

Instructions
 

  • Gather the ingredients. Preheat the oven to 400F degrees.
  • Then, in a bowl, combine 1/4 cup of olive oil, 2 tablespoons of balsamic vinegar, oregano, salt and pepper. Season the mixture with salt and pepper to taste. Place the chicken in the bowl with the olive oil mixture and coat evenly. Allow the chicken to marinate for at least 15 minutes.
  • Using a sharp knife make slits in the chicken not completely cutting through, slits should be approximately half an inch thickness.
  • Slice tomato and mozzarella in a half-circle shape.
  • Fill the chicken slits with slices of tomato, mozzarella, add basil leaves, saving some basil leaves for garnishing.
  • Bake for 30 minutes or till the internal temperature of the chicken measures at 160 degrees. Once baked, sprinkle with fresh basil and serve.
