Unstuffed Peppers

These easy unstuffed peppers are made on the stovetop in the skillet and it’s a perfect recipe to make for dinner tonight or when you have a busy weeknight. You will need only a few ingredients and less than 30 minutes to make this flavorful dish.

Ingredients
  

  • 1 tbsp olive oil
  • 2 bell peppers diced
  • 1 pound ground beef
  • 3 cup riced cauliflower frozen
  • 2 cup tomato sauce passata
  • 2 tbsp balsamic vinegar
  • 1 tsp sea salt
  • 1 cup cheddar cheese shredded

Instructions
 

  • Gather the ingredients. In a large skillet, heat the olive oil over medium heat. Add the diced peppers and cook until slightly softened and browned for approximately 5 minutes.
  • Add the ground beef, use a wooden spoon to break large chunks into smaller ones, and continue stirring the beef mixture until browned for about 5 minutes.
  • Stir in cauliflower rice, cook till soft, and not frozen anymore.
  • Add tomato sauce, stir, bring to simmer, and cook covered for 10 minutes. The mixture should slightly bubble while covered. Once cooked, add salt and balsamic vinegar, stir well, taste, and adjust the flavor if needed. Top with shredded cheese, let stand for 5 minutes before serving. Enjoy!

Notes

Choose the right type of pepper. The most common types of peppers used in stuffed peppers recipes are green peppers, but you can also use red bell pepper for a more sweet flavor.
Cut the peppers in half lengthwise and remove the seeds and ribs.
Serve the unstuffed peppers with your favorite toppings. Popular options include sour cream, yogurt, salsa, or shredded cheese.
If you’re looking for a lower-carb option, riced cauliflower, zucchini, and summer squash noodles would also be delicious. No matter what you choose, simply cook the ingredient according to the package directions before adding it to the rest of the recipe.
