Russian carrot salad with pesto is budget-friendly and very easy to make. This salad is light and flavorful and made in no time at all.

  • 6 carrot medium-sized, peeled
  • 2 cup spinach washed, stems removed
  • 3/4 cup walnuts
  • 1/3 cup olive oil
  • 1 clove garlic diced
  • 1/2 tsp sea salt
  • 2 tbsp water


  • Prepare the ingredients. Wash and peel the carrots.
  • CARROTS. Use a julienne peeler or box grater to shred the carrots.
  • PESTO. Place in a food processor spinach, olive oil, and nuts. Pulse till well blended. Add diced garlic and salt, pulse till mixed well. Add 1-2 tablespoons of water to thin the mixture if necessary. Mix pesto with carrots and enjoy.
