Prepare the ingredients. Wash and peel the carrots.
CARROTS. Use a julienne peeler or box grater to shred the carrots.
PESTO. Place in a food processor spinach, olive oil, and nuts. Pulse till well blended. Add diced garlic and salt, pulse till mixed well. Add 1-2 tablespoons of water to thin the mixture if necessary. Mix pesto with carrots and enjoy.
