These beef rolls with cabbage are juicy, tasty, and festive-looking. The fire-roasted tomatoes add a big flavor to this dish.

cabbage head
medium-sized, shredded

Vidalia onion

fire-roasted diced tomatoes

Instructions
Gather the ingredients.
Slice cabbage thinly or shred in the food processor, place in a large mixing bowl.
Boil water, add to the bowl to cover the cabbage, leave for 10 minutes soaking.
Preheat oven to 375ºF.
Shred or dice an onion, add to the large mixing bowl. Add to the same bowl egg, salt, and drained cabbage.
Using your hands make eight small rolls. Arrange on a baking dish and bake for 45 minutes.
Top cabbage rolls with diced tomatoes and put back in the oven for five more minutes.
Before serving, garnish with cilantro.
Notes
-Goes well with a tablespoon of grass-fed plain yogurt on top.
