Easy Cabbage Rolls

These beef rolls with cabbage are juicy, tasty, and festive-looking. The fire-roasted tomatoes add a big flavor to this dish.

Ingredients
  

  • 1 pound ground beef
  • 1/2 cabbage head medium-sized, shredded
  • 1 egg
  • 1 Vidalia onion
  • 1 tsp sea salt
  • 1 can fire-roasted diced tomatoes
  • cilantro for garnish

Instructions
 

  • Gather the ingredients.
  • Slice cabbage thinly or shred in the food processor, place in a large mixing bowl.
  • Boil water, add to the bowl to cover the cabbage, leave for 10 minutes soaking.
  • Preheat oven to 375ºF.
  • Shred or dice an onion, add to the large mixing bowl. Add to the same bowl egg, salt, and drained cabbage.
  • Using your hands make eight small rolls. Arrange on a baking dish and bake for 45 minutes.
  • Top cabbage rolls with diced tomatoes and put back in the oven for five more minutes.
  • Before serving, garnish with cilantro.

Notes

-Goes well with a tablespoon of grass-fed plain yogurt on top.
