Baked Cod With Maple Mango Glaze (GF)
This easy baked cod recipe is made with sweet mango glaze. It makes a tasty and festive-looking dinner. The recipe is gluten-free and one of my favorites.
Preheat oven to 375F degrees.
Pat dry fish before arranging it on the baking dish.
Use cast iron pan to quickly roast on high first mangoes, then corn.
Make the dressing by mixing maple syrup, olive oil, salt.
Arrange mango-corn mixture on top of the fish and pour over the dressing.
Bake for 15-17 minutes till cod is “flaky”.
