Ingredients

  • 2 sweet Onion , large
  • 12 oz bacon , 12 slices, sugar-free and uncured
  • 1 tsp coconut sugar
  • 1/2 teaspoon chili powder

Instructions

  • Gather the ingredients—Preheat the oven to 425F degrees. Cut the ends off onions. Slice into six thick onion rings, approximately 1 1/2 inch thickness. Separate the rings, make sure each has 2-3 layers.
  • Wrap an entire onion ring with a bacon slice threading through the middle. For each circle, use two slices, slightly overlapping and stretching while wrapping. Arrange on the baking rack inside the baking sheet. Sprinkle with sugar and chili powder.
  • Bake on the middle rack for 15 minutes till fully cooked and brown. If you are looking for more crisp, broil on high for 2-4 minutes before serving.

Notes

Choose large onion and make sure to cut each onion into thick slices. This will help to keep the shape.
This recipe makes six large rings. Each onion ring uses two bacon slices.
Since we add a bit of sugar, this might result in some smoky flavors in the oven. If you want to keep it completely smoke-free, skip the broiling option at the end or choose to grill instead.
To make keto onion rings, skip the sugar in the recipe and make sure that bacon is sugar-free.
