This frittata with sausage is filling and made in one pan. This meal is protein-rich, super easy to make, and requires only five main ingredients—the perfect easy option for breakfast or even a simple dinner.
In the meantime, using the stovetop preheat the 12-inch cast-iron pan over medium-high heat, add ghee.
PREP INGREDIENTS. Slice and prep the ingredients. In a mixing bowl, whisk the eggs, add salt and chopped dill.
COOK. Once the ghee has melted in the pan, add broccoli, if using frozen broccoli cover the pan with the lid for 1-2 minutes to steam and soften. Once broccoli is soft, add cubed sausage, fry for a minute or so, add tomatoes, stir. Add egg mixture, turn off the stovetop and place the pan in the oven under the broiler.
BROIL for 5-7 minutes on the top shelf till eggs are set and cooked, and the frittata is slightly brown. Remove, slice, and enjoy it!
Notes
-Sausage. If possible, choose an uncured kind of sausage with minimum ingredients and no fillers, without preservatives and nitrates added. I also like to choose meat that is grass-fed and raised without hormones on open pastures from certified humane farms. Not always easy to find, but I was excited to find this kind of polish sausage at Costco last time I was grocery shopping.-Broccoli, I always have a large bag of organic broccoli stocked in the freezer, it’s cheap, never goes bad, and always available if needed.-Dill and tomatoes are in seasons, fresh and flavorful, and widely available.-Eggs, if possible, choose eggs from free-range chickens.
