Creamy Cucumber Tomato Salad

Creamy cucumber tomato salad is one is my favorite summer salad. The freshness of the dill, juicy tomatoes, fresh in-season cucumbers, radishes, and crunchy sweet onion creates a light and flavorful dish. Perfect for lunches or light dinners. All the ingredients are easy to find at any store or even better, at the farmer’s market.

Ingredients
  

  • 4 tomatoes
  • 1 cucumber
  • 1/2 Vidalia onion
  • 1 bunch radishes
  • 3 tbsp fresh dill finely chopped
  • 5 tbsp yogurt
  • 1 tsp sea salt

Instructions
 

  • Gather the ingredients.
  • Wash all vegetables, chop, and slice, add to the large mixing bowl.
  • Finely dice the dill, and add to the bowl. Add yogurt and salt, mix, and serve.

Notes

Feel free to use olive oil instead of yogurt dressing.
If you are looking to add more protein, the sliced boiled eggs work great here.
