Gluten Free Meatballs With Cauliflower

These gluten-free meatballs are juicy and tasty. They are made with riced cauliflower instead of breadcrumbs. The cheese and cumin spice add that extra special flavor. These meatballs are baked in the oven and done in 30 minutes. The recipe is simple and requires only seven ingredients without any additional preparations in advance.

Ingredients
  

  • 1 pound ground pork
  • 1 pound riced cauliflower slightly defrosted
  • 2 egg
  • 1 1/4 tsp salt
  • 2 cup Irish cheese shredded
  • 2 1/2 tsp cumin spice
  • 1 1/2 cup organic marinara sauce

Instructions
 

  • In a large mixing bowl, add pork, cauliflower, eggs, cumin, salt, and one and a half cups of shredded cheese.
  • Set oven to broil on high and preheat for 5 minutes before placing a dish with meatballs.
  • Prepare a large baking dish, form 15 meatballs, and broil for 10-12 minutes, or till the internal temperature will reach 16o degrees.
  • Optional step. Once meatballs are cooked, pour over the marinara sauce and add half a cup of cheese on top, broil for three more minutes. 

Notes

-Makes 15 generous-sized meatballs.
-The riced cauliflower could be found in many stores in the freezer section, the Costco has it often -available.
