These simple low-carb Cheesy Chicken Fritters with Corn are made with only 5 simple ingredients! There are gluten-free and made without flour.

Ingredients
  

  • 1 pound boneless chicken thighs approx. 4 pc.
  • 1/2 cup corn
  • 1/2 cup cilantro finely diced
  • 3/4 cup cheddar cheese shredded
  • 1 egg pasture-raised
  • 1 tsp sea salt

Instructions
 

  • In the food processor, add chicken pulse until the consistency of the ground meat.
  • In a large bowl, add ground chicken, corn, cilantro, cheese, egg, salt, mix well.
  • Use a wet tablespoon to scoop eight balls, place them on the baking sheet lined with parchment paper. Use a wet fork to flatten and to form in the shape of patties.
  • Broil on the second to top rack position, each side on high for 7 minutes.
