Butternut Squash Apple Soup With Bacon

This is a cozy soup recipe made in one pot in 25 minutes.  The perfect combination of the sweet apple and the smoky bacon adds to the flavor and makes it a delicious meal.

Ingredients
  

  • 1 pound butternut squash cubed
  • 8 oz uncured smoked bacon one package
  • 1 Gala apple cubed
  • 2 tbsp apple cider vinegar
  • 4 tbsp sprouted pumpkin seeds to garnish
  • 3 cup water
  • 1 1/2 tsp sea salt

Instructions
 

  • Gather the ingredients.
  • Use kitchen shears to cut bacon crosswise in 1/8 pieces. Preheat dutch oven on medium-high heat, lightly brown bacon for a couple of minutes.
  • In the mixer, place cubed butternut squash with water, pulse till blended.
  • Add the squash mixture, diced apples, and sea salt to the pot with bacon. Cover, reduce heat to medium-low and simmer for approximately 10-15 minutes.
  • Before turning the burner off, add the vinegar, stir well. Garnish with pumpkin seeds before serving.

Notes

-To keep this recipe healthy, use sugar-free uncured bacon and organic ingredient when possible.
-To save time use frozen pre-cut organic butternut squash, you can find some in the freezer section at Costco.
-These are my favorite sprouted pumpkin seeds.
