This cabbage curry made with ramen noodles and cashew nuts. It's made in one pot with easy-to-find ingredients.

  • 3 cakes ramen noodles
  • 1 tbsp ghee
  • 12 oz cabbage mix (aprox. 6 cups)
  • 1 can coconut milk
  • 1 tsp himalayan salt
  • 3 tsp curry spice
  • 1 cup cashew nuts


  • Gather the ingredients - Cook ramen noodles In the large Dutch oven. Boil according to the package directions. Don't overcook. Drain and rinse. Let is sit in the colander.
  • Using the same pot over medium-high heat, melt one tablespoon of ghee. Once warm, add cabbage mix, stir till cabbage is slightly soft but still crunchy. Reduce heat, add coconut milk, salt, curry powder spice, cashews nut, mix to combine - Cook for 2 more minutes.
  • Add noodles to the pot last, stir and serve.


To keep the perfect texture, don’t overcook the noodles and cabbage.
It’s important to rinse the ramen after boiling.
Adjust the flavor to taste. If not a fan of curry spice, start with one teaspoon.
