Easy Pumpkin Curry Pasta With Ground Beef

This simple and speedy pumpkin curry pasta recipe made in 25 minutes, a perfect option for a busy lifestyle. The autumn-like colors and flavors of creamy coconut milk with pumpkin puree and pasta make this meal comforting and satisfying.

Ingredients
  

  • 1 package pasta
  • 1 pound ground beef
  • 1 can coconut milk
  • 1 can pumpkin puree
  • 1 tsp sea salt
  • 2 tsp curry
  • 1/3 cup basil Leaves

Instructions
 

  • Gather all the ingredients.
  • Cook pasta according to the directions on the package. Using a deep pot bring water to boil. To speed up the process cover pot with the lid.
  • While pasta is cooking, in a large skillet, on medium-high heat brown ground beef till no longer pink, using a wooden spoon to break the large chunks of meat. Add coconut milk, pumpkin puree, salt, curry spice, stir well. Add drained pasta, stir. Add basil leaves before serving.

Notes

-Coconut Milk. If possible, use unsweetened coconut milk with minimum additives. I like to use the Thrive market brand.
-Pasta. Use your favorite kind. This recipe was made using this gluten-free pasta made with rice and amaranth.
-Pumpkin puree. Choose pure pumpkin pure and not the pumpkin pie mix.
