Oven-Baked Easy Falafel (Gluten-Free)

Easy falafel recipe made with canned chickpeas, parsley, and some simple ingredients from the pantry. These falafels are baked in the oven and ready in 45 minutes.

Ingredients
  

  • 1/2 Vidalia onion large-sized, diced
  • 2 cup parsley packed, stems removed
  • 2 can chickpeas two 15.5 oz cans, rinsed
  • 1 tsp salt
  • 2 tbsp olive oil
  • 5 tsp cumin
  • 6 tbsp chickpea flour

Instructions
 

  • Preheat oven to 400F degrees. Gather the ingredients.
  • In a food processor, place parsley and pulse till minced, scrape sides a couple of times between pulsing. Add a diced onion, pulse till minced. Place the mixture in a large mixing bowl.
  • Rinsed chickpeas add to the food processor, pulse till minced, and not completely blended.
  • Add chickpeas to the bowl with parsley. Add to the bowl salt, olive oil, and cumin. Start gradually adding flour while mixing with the spoon.
  • Prepare a large baking sheet lined with parchment paper. Using a tablespoon, scoop enough mixture to form falafel, use hands to shape the round ball. Slightly flatten with a fork. Make sure the patties are spaced out and don’t touch each other.
  • Bake on the middle rack position for 30 minutes till lightly brown.

Notes

-Serve as a snack or in salads.
