15 Minute Eggs And Sausage Skillet

This 15-minute egg and sausage skillet is a perfect shortcut recipe. Make it for breakfast or dinner. Super quick to throw together with rich flavors of goat cheese, sausage with sage, and gooey egg on top of spinach and cauliflower.  The skillet is gluten-free, protein-rich, packed with healthy nutrients. I love using this recipe these days when we are out of fresh produce but have some frozen “time-savers” available.

Ingredients
  

  • 7 ozs sausage frozen
  • 1 pound riced cauliflower frozen
  • 1 pound spinach frozen
  • 1 tsp sea salt
  • 3 ozs goat cheese approx. 1/3 of the log from Costco
  • 4 egg

Instructions
 

  • PREHEAT. Set the oven to broil on “high”.
  • COOK. Preheat a large oven-safe skillet over medium-high heat and add the frozen sausage. In a couple of minutes add cauliflower, spinach, cover, and keep the lid on for about 5 minutes. Add salt, stir well. Add crumbled goat cheese and crack the eggs on top.
  • BROIL. Once eggs are added to the skillet, place the skillet in the oven on the top shelf and broil for about 3-4 minutes till egg whites are set and yolks are still slightly runny.
  • OPTIONAL. Sprinkle paprika or add some hot sauce.
