Ingredients

  • 1 1/2 cup Gouda cheese grated
  • 4 flour tortillas medium-sized
  • 2 cups spinach leaves fresh leaves, washed and dried
  • 1 red onion small and thinly sliced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  • Heat the olive oil in a skillet over medium heat. Add the sliced red onion and sauté until soft and lightly caramelized, about 5-6 minutes. Remove from heat and set aside.
  • Place a tortilla on a clean, flat surface. Sprinkle 1/4 cup of Gouda cheese evenly over half of the tortilla.
  • Arrange a handful of spinach leaves over the cheese layer. Add a few spoonfuls of sautéed onions on top. Sprinkle with salt and pepper to taste.
  • Fold the tortilla in half, covering the filling, and press down gently.Repeat the process with the remaining tortillas and fillings.
  • Heat a non-stick skillet or griddle over medium heat. Carefully place one quesadilla in the skillet and cook for about 2-3 minutes on each side, or until the cheese has melted and the tortilla is golden brown.
  • Remove the quesadilla from the skillet and transfer it to a cutting board. Cut it into wedges. Repeat the cooking process with the remaining quesadillas.

Notes

Serve the Gouda cheese and spinach quesadillas warm as an appetizer or a light meal.
If desired, you can also add salsa, sour cream, or guacamole for dipping.
