Gouda is a favorite among cheese lovers everywhere. Its unique taste appeals to both home cooks and connoisseurs alike. But what does Gouda cheese taste like? And what makes it so good?
Heat the olive oil in a skillet over medium heat. Add the sliced red onion and sauté until soft and lightly caramelized, about 5-6 minutes. Remove from heat and set aside.
Place a tortilla on a clean, flat surface. Sprinkle 1/4 cup of Gouda cheese evenly over half of the tortilla.
Arrange a handful of spinach leaves over the cheese layer. Add a few spoonfuls of sautéed onions on top. Sprinkle with salt and pepper to taste.
Fold the tortilla in half, covering the filling, and press down gently.Repeat the process with the remaining tortillas and fillings.
Heat a non-stick skillet or griddle over medium heat. Carefully place one quesadilla in the skillet and cook for about 2-3 minutes on each side, or until the cheese has melted and the tortilla is golden brown.
Remove the quesadilla from the skillet and transfer it to a cutting board. Cut it into wedges. Repeat the cooking process with the remaining quesadillas.

Serve the Gouda cheese and spinach quesadillas warm as an appetizer or a light meal. If desired, you can also add salsa, sour cream, or guacamole for dipping.
