Garam Masala Substitute

If you don’t have any garam masala on hand or you can’t find any in nearby stores, here is a Garam Masala substitute. Creating your own garam masala blend also allows you to adjust the spice blends to your desired flavor.

Equipment

  • Small skillet
  • Spice grinder or coffee grinder
  • spice scale

Ingredients
  

  • 8 whole green cardamom pods
  • 20 grams whole coriander
  • 12 grams whole black peppercorns
  • 10 grams whole cumin
  • 6 grams cinnamon stick
  • 2 grams nutmeg

Instructions
 

  • Start by heating a skillet over medium heat.
  • Once you have heated the skillet, add the coriander, cumin, cardamom, and peppercorns.
  • Stir them occasionally for 4-5 minutes to toast the spices evenly.
  • Once you have toasted the spices and released their aromas, set them aside.
  • Let them cool, then grind them in a grinder or mortar and pestle.
  • Grind nutmeg and cinnamon.
  • Stir in the grated nutmeg and cinnamon with the other spices.
  • Store the spice blend in an airtight container. Keep it in a cool and dry place for it to last up to several months.

Notes

Do not skip the roasting step because it will give the whole spices a stronger and more flavorful taste.
Remember not to roast nutmeg and cinnamon. Sure, they may take some heat, but they will easily have a burned taste if you’re not careful. It’s best to skip the roasting part for these sweet spices.
