1.Gather the ingredients—Preheat the oven to 375F degrees. Melt the butter, let it cool slightly. In a large mixing bowl, whisk the eggs, add three bananas, mash using a potato masher.

2. In a measuring cup, add kefir and baking powder. Stir vigorously until you see the bubbles on the surface. Add to the bowl with eggs.

3. Add cooled butter to the bowl with eggs, mix. Start adding flour gradually while stirring to combine. Gently fold chocolate chips.

4. Line a loaf pan with parchment paper. Add the batter.

5. Slice the last banana in half and arrange on top, gently pressing.

6. Bake for 1 hour on a middle shelf till the toothpick comes out clean when tested in the loaf center.

  • This banana bread is mildly sweet. It’s baked with chocolate chips sweetened with stevia and ripe bananas. To make it even healthier, use crushed nuts or blueberries instead. If you would like it sweeter, add 1/2 cup of coconut sugar.
  • This recipe uses gluten-free oat flour. If you can’t find any, you can make it yourself using gluten-free rolled oats and a high-speed blender or food processor.
  • Salted butter in this recipe balances out the sweetness. Kerrygold butter kind has only a touch of salt.
  • Variations. Feel free to add extra spice to your liking: vanilla or cinnamon
