These cottage cheese pancakes are the perfect option for a tasty and filling breakfast! They are protein-rich and require only three ingredients. This recipe is sugar-free; serve it with some maple syrup or your favorite jam to balance out the sour flavor of these cottage cheese pancakes.

These cottage cheese pancakes or Syrniki originally is made with farmer’s cheese that could be a little challenging to get in the regular grocery store. This recipe is slightly modified using regular cottage cheese available almost at any store.

Ingredient Notes

  • Cottage cheese. Choose full-fat plain cottage cheese since it will be thicker and not runny compared to the low-fat kind.
  • Spelt flour. I love using sprouted spelt flour since it’s less processed, more nutritious, and could be easier to digest.
  • Eggs. You’ll need room-temperature large-sized eggs.
  • Jam. Choose your favorite kind. I was lucky to get some tasty black currant jam (pictured).
  • Coconut oil. Feel free to use ghee or butter.

Step-By-Step Instructions:

Step 1. Whisk eggs in a bowl. Add cottage cheese, vanilla extract, baking powder. Start gradually adding flour, mix well to combine.

Step 2. Preheat a cast-iron skillet on medium-high heat. Once heated, reduce to medium-low. Fry pancakes on each side till slightly crispy. Serve warm with your favorite jam.

Recipe Tips

  • If your cottage cheese has too much liquid, drain all the liquid. You should use only the thick cottage cheese mixture for this recipe.
  • The exact amount of flour will depend on the egg size and cottage cheese texture.
  • The perfect batter should be thick enough to shape the pancake but not too thick to have tender pancakes still.
  • Use a well-seasoned cast-iron skillet or non-stick pan to make these pancakes.
  • Ensure the pan is preheated before frying pancakes so they don’t stick to the pan.
  • Serve pancakes with your favorite jam or fresh fruit and maple syrup. You can even serve them with homemade whipped cream.
  • Make ahead. These pancakes could be made ahead of time and stored in the container in the fridge. They are tasty when eaten cold too!

  • 11/2 cup spelt flour
  • 1 tsp vanilla extract

  • 2 tbs coconut oil for frying

Notes

Drain all the liquid from cottage cheese before mixing with the batter.
Adjust the amount of flour based on the batter texture. 
Use a well-seasoned cast-iron skillet or non-stick pan.
Please make sure that the pan is preheated before adding batter to the pan.
Serve pancakes with your favorite jam, whipped cream or fresh berries with maple syrup.
