Kefir Pancakes (Russian Oladi)


These healthy kefir pancakes are made with kefir and spelt flour. They are tasty and fluffy with a cloud-like texture—this recipe is inspired by Russian oladi pancakes made with kefir.

Ingredient Notes

  • Organic Sprouted spelt flour. It’s whole wheat flour and more nutritionally dense. Or you can use any other flour to make lighter pancakes; you might need to adjust the amount of kefir then.
  • Kefir. Kefir adds just the perfect amount of flavor, so no salt is needed. I use unsweetened whole milk kefir or goat milk kefir. Buttermilk would make a good substitute.
  • Baking powder. The baking powder helps to create a reaction with kefir to achieve the fluffy texture in these pancakes.

How to Make Oladi

Step 1. Gather the ingredients. In a large mixing bowl, whisk the eggs. In a measuring cup, add kefir and baking powder and whisk till frothy. Add to the egg mixture. Gradually add flour, mix to combine, and let stand for about 10 minutes.

Step 2. Preheat cast-iron skillet to medium-high heat. Use some coconut oil for frying. Fry each pancake on each side for about 1-2 minutes till golden. Serve with fresh fruit or sour cream and jam.

Recipe Tips

  • For best pancakes, use room temperature kefir.
  • This recipe doesn’t have any added sugar. If you desire, you can add a splash of maple syrup to sweeten the batter. You can also add chocolate chips to the batter and make these pancakes extra fancy!
  • Choosing the right pan is important in this recipe. The heat distribution and non-stick surface play a role in making these pancakes perfectly. I like to use a well-seasoned cast-iron pan; Lodge brand or Le Creuset would be my first pick.
  • Use any toppings: fresh berries, frozen fruits, favorite jam, or preserve. Serve with sour cream and berries or honey and nuts.
  • Store in the air-tight container in the fridge.
